Guacamole Salsa

We were invited to a Mexican themed going away dinner for a friend who is off on an amazing trip to Central America, I can just see her there now basking in the sun with a cocktail in hand, enjoying all the delights that the region has to offer {I hope you’re having fun if you are reading this L x}.  Back to the dip ~ I was asked to contribute a guacamole to the evening, and decided to take along my ‘salsa’ version of the dish.  It was a big hit, with the bowl being practically licked clean ~ unfortunately before some of the guests had had a chance to arrive!  When I make it at home I separate the dip into individual serving bowls so everyone gets their fair share {it disappears fast}.  The recipe is really simple, it has a fresh slightly sweet taste from the tomato and onion and pairs well with Turkish bread or corn chips.

INGREDIENTS
Greek yogurt
Mashed avocado
Diced avocado
Diced tomato
Finely diced red onion
Chilli flakes
Salt

I don’t have a recipe that I follow as such, I basically just add the above ingredients until I am happy with the flavour and consistency, but as a guide it would probably be a couple of cups of Greek yogurt, one mashed avocado, one diced avocado, half to a quarter of finely diced red salad onion, a couple of diced tomatoes, with salt added to taste and seasoned on top with chilli flakes.  I prefer mine with more Greek yogurt and red onion added, but I suggest you do a taste test and see what you like for yourself.
